  • 5 lbs clams (steamers)
  • 2 cups water
  • 4 ozs salt pork (meaty, rind removed and cut into 13 inch dice)
  • 2 tbsps unsalted butter
  • 1 onion (10 to 12 ounces cut into 12 inch dice)
  • 2 stalks celery (4 ounces cut into 13 inch dice)
  • 2 12 sprigs thyme leaves (fresh, removed and chopped 1 teaspoon)
  • 2 bay leaves (dried)
  • 1 12 lbs yukon gold (maine pei or other all purpose potatoes peeled and cut into 12 inch dice)
  • 1 12 cups heavy cream (2 cups if desired)
  • black pepper (freshly ground)
  • sea salt (kosher, needed)
  • 2 tbsps italian parsley (chopped fresh)
  • 2 tbsps chives (minced fresh)
