Ingredients

  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground sumac
  • 24 ozs fish fillets (mild, white-fleshed, such as Pacific halibut, grouper, cod, or haddock, fillets should be between 3/4 inch and 1 1/4 inches thick)

  • 1 yellow onion (medium, small dice)
  • 1 fennel bulb (small, outside layer discarded, cored, and cut into small dice)
  • 1/2 cup dry white wine
  • 2 tbsps currant
  • 15 ozs chickpeas (also known as garbanzo beans, drained and rinsed, about 1 1/2 cups)
  • 1 cup bottled clam juice
  • 1/4 cup green olives (coarsely chopped pitted)
  • 3 tbsps chopped cilantro fresh (finely)
  • 2 tbsps preserved lemon (finely chopped)
  • 12 preserved lemon (very thin slices)
