Ingredients

  • 1 lb cashew nuts (finely chopped)
  • 1 lb sultana (golden raisins)
  • 1 lb raisins (such as jumbo flames)
  • 1 lb candied cherries
  • 16 ozs ginger (Sri Lankan, preserve, or 14 oz candied ginger)
  • 1 jar preserves (sri lankan chow chow, which, by the way, is not the same as chinese, so do not substitute)
  • 8 ozs pumpkin (Sri Lankan, preserve)
  • 1/2 lb candied orange peel
  • 1/2 lb candied lemon peel
  • 1 lb butter
  • 1 lb semolina
  • 24 egg yolks
  • 12 egg whites
  • 1 lb granulated sugar
  • 1 lemon (finely shredded)
  • 1 orange (finely shredded)
  • 1 orange
  • juice (half lemon)
  • 3 ozs rose water
  • 3 tbsps vanilla extract
  • 11/2 cups brandy (plus more for drizzling)
  • 1/4 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/8 tsp ground cardamom
