Finally a recipe that can do something with boneless, skinless chicken breasts. First things first, I veared off recipe. It's summer time and therefore, I grill everything I can. To prep the chicken though, instead of dry rubbing all of the incredients on there, I wound up combing all incredients (which you need to double - at least), indluding the butter, which I melted, as well as the zest of one of the lime, and some fresh chopped garlic. Once I had everything combinded into a sauce, I then began to baste the chicken with the lime butter spice sauce and I've got to say, it came out perfectly! The chicken was moist and flavorful with just the right amount of heat and a hint of the lime and garlic on the back end. This was a great, light, easy to make summer dish and I highly recommend it.
