  • 2/3 cup brown dark firmli pack sugar

  • 21/4 lbs bosc pears (or Bartlett, about 5)
  • 1/2 stick unsalted butter
  • 1 tbsp granulated sugar
  • 1 tbsp fresh lemon juice
  • 2 tbsps brandy
  • 4 large egg whites (at room temperature 30 minutes)
  • 1/2 tsp cream of tartar
  • 1/4 tsp salt
  • 1/4 cup maple sugar
  • 11/3 cups pure maple syrup (preferably Grade A dark amber)
  • 1 lb unsalted butter (cut into tablespoons and softened)
