  • 1 lb dried pinto beans (picked over)
  • 3 onion (medium, chopped fine)
  • 5 garlic cloves (minced)
  • 1/4 cup vegetable oil
  • 2 red bell pepper (chopped)
  • 1 tbsp chili powder
  • 2 tsps ground cumin
  • 6 cups water
  • 1/2 lb sausages (cured chorizo, Spanish, *, sliced 1/4 inch thick, if desired)
  • 32 ozs tomatoes (can whole, drained and puréed coarse)
  • 2 cups chicken broth
  • 1/2 cup enchilada sauce (canned mild, not salsa, or to taste)
  • 3 tbsps fresh lime juice (or to taste)
  • 1/2 cup fresh coriander (chopped)
