  • 1 cup long-grain brown rice (uncooked)
  • 1 tsp salt
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1 cup pecans (coarsely chopped, 4 oz.)
  • 3 tbsps red wine vinegar
  • 3 tbsps olive oil
  • 1/4 tsp ground pepper (fresh)
  • 1 pinch cayenne (or 1 pinch hot sauce)
  • 5 scallions (minced, white and light green parts)
  • 2 tomatoes (medium, chopped)

  • 1 red bell pepper (medium, chopped)
  • 1/2 cup dried currants (or 1/2 cup raisins)
  • 1/2 cup fresh parsley (chopped)
