  • 4 cups soba (hot cooked, about 8 ounces uncooked buckwheat noodles or whole wheat spaghetti)
  • 1 cup chinese cabbage (very thinly sliced napa)
  • 2 cups beansprouts (fresh)
  • 1 cup shredded carrots
  • 1/2 cup chopped cilantro fresh
  • 121/3 ozs firm tofu (drained and cut into 1-inch cubes)
