  • 1/4 cup chili powder (ancho)
  • 2 tbsps spanish paprika
  • 2 tbsps ground black pepper (freshly)
  • 2 tbsps dry mustard
  • 2 tbsps kosher salt

  • 2 tsps chile de arbol
  • 2 pork ribs (racks St. Louis-style, 12 ribs each, membrane removed)
  • 1/4 cup canola oil
  • 2 cups cider vinegar
  • 2 tbsps light brown sugar
  • 1/2 tsp cayenne (powder)
  • 3 dashes hot pepper sauce (recommended: Tabasco)
  • 1 tbsp kosher salt
  • 1/4 tsp ground black pepper (freshly)
  • chips (Mix of hickory and applewood)
  • 1 qt apple cider
  • barbecue sauce (North Carolina, recipe follows)
  • 1/4 cup canola oil
  • 2 spanish onion (medium, coarsely chopped)
  • 6 cloves garlic (coarsely chopped)
  • 2 cups ketchup
  • 2/3 cup water
  • 1/4 cup chili powder (ancho)
  • 2 tbsps paprika
  • 2/3 cup dijon mustard
  • 2/3 cup cider vinegar
  • 2 tbsps worcestershire sauce
  • 2 chiles (canned chipotle, in adobo, chopped)
  • 1/4 cup dark brown sugar
  • 2 tbsps honey
  • 2 tbsps molasses
  • ground black pepper
