Ingredients

  • 4 boneless skinless chicken breasts (cut in half lengthwise, about 2 lbs. boneless chicken)
  • 1 cup tomato salsa (mild or medium, homemade or from a jar)
  • 1 tsp onion powder
  • 4 ozs green chile (diced, not drained, Anaheim chiles)
  • 2 tbsps Cholula Hot Sauce (or other Mexican hot sauce of your choice)
  • 2 tbsps lime juice (fresh-squeezed)
  • 2 avocado (medium or large, diced into small pieces)
  • 3/4 cup chopped cilantro fresh
  • 1/4 cup purple onion (chopped)
  • 1/4 cup lime juice (fresh-squeezed)
  • 2 heads iceberg lettuce (washed if needed)
  • 8 flour tortillas (medium-sized, use whole wheat or low-carb tortillas for South Beach Diet)
