  • 2 cups onion (chopped)
  • 1 cup chopped celery
  • 1 cup carrots (chopped)
  • 21/2 tsps salt
  • 1/4 tsp ground cayenne pepper
  • 1 tsp fresh leav oregano (chopped)
  • 1 tsp chopped fresh thyme (leave)
  • 1 tbsp basil leaves (chopped fresh)
  • 2 tsps tarragon leaves (chopped fresh)
  • 2 bay leaves
  • 3 tbsps tomato paste
  • 1 cup brandy
  • 1/4 cup butter (room temperature)
  • 1/4 cup flour
  • 1/2 cup heavy cream
  • 3 lbs medium shrimp (peeled and deveined, shells reserved for stock)
