  • 6 lbs bone-in short ribs
  • ground black pepper
  • kosher salt
  • 1 tbsp bacon fat (lard or oil)
  • 1 onion (large, diced)
  • 2 carrots (medium, diced)
  • 2 stalks celery (diced)
  • 2 cloves garlic (finely chopped)
  • 2 tbsps tomato paste
  • 1 tbsp anchovy paste
  • 1/2 btl red wine
  • 14 ozs tomatoes (fire-roasted whole, and juice)
  • 1 tbsp dijon mustard
  • 4 dashes worcestershire sauce
  • 1 oz dried porcini mushrooms
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 sprig rosemary leaves (chopped)
  • 2 bay leaves
  • chicken stock (or water)
  • gremolata (recipe follows)
  • 1 clove garlic (minced)
  • 1 lemon zest (large, only)
  • 1/4 cup parsley (finely chopped)
  • 1/2 tsp salt
  • 1 tsp olive oil
