Ingredients

  • 2 lbs beef (prime quality, cut into paper thin slices, about 8 by 3-inches)
  • 12 shiitake (wiped, trimmed and crisscrossed on cap with a knife)
  • 6 sliced green onions (diagonally into 2-inch lengths)
  • 1/4 lb spinach (washed and stems trimmed)
  • 1 block tofu (about 10ounces, cut into cubes)
  • 1/2 lb bamboo shoots (canned, whole, washed, cut into 1/4-inch slices)
  • 2 qts dashi (basic, recipe follows, or light beef stock)
  • 3 qts cold water
  • 3 ozs kelp (giant, kombu)
  • 3 ozs dried bonito flakes
  • 2 cups dashi (basic)
  • 2 tbsps dark soy sauce
  • 2 tbsps mirin
  • white vinegar (to taste)
