Ingredients

  • 1 oz dried porcini mushrooms (rehydrated, plus resulting stock)
  • 7 ozs fresh shiitake mushrooms
  • 10 ozs baby portobello mushrooms (fresh)
  • 2 cups leeks (roughly chopped, while and pale green parts only)
  • 1 carrots (large, peeled and cut to medium dice)
  • 2 celery ribs (cut to medium dice)
  • 3 sprigs thyme (plus 1 teasoon freshly minced thyme leaves)
  • 1 sprig tarragon (plus about 1 tablespoon freshly minced tarragon leaves)
  • 1 cup dry white wine
  • 11/2 cups heavy cream
  • 2 tbsps madeira wine
  • 4 tsps arrowroot powder (mixed with an equal amount of water to make a slurry)
