  • 1 red bell pepper (halved and sliced thinly)
  • 1 onion (halved and sliced thinly)
  • 1/2 tsp salt
  • 1/4 tsp black pepper (fresh ground)
  • 2 tbsps balsamic vinegar (glace)
  • 2 garlic cloves (minced)
  • 2 tbsps fresh oregano (chopped)
  • 1 tbsp fennel (ground)
  • 1 tbsp sweet paprika
  • 2 tsps salt
  • 3/4 tsp black pepper (fresh ground)
  • 2 ozs pecorino romano cheese (grated)
  • 1/4 cup zinfandel (sutter home)
  • 1 tsp tabasco sauce
  • 2 lbs ground chuck
  • 1/2 cup mayo
  • 1/4 cup olive oil (finely chopped sundried tomatoes packed)
  • 1 tbsp sun-dried tomatoes (oil)
  • 1 garlic cloves (crushed)
  • extra-virgin olive oil (vegetable oil or extra virgin olive oil for brushing on the grill rack)
  • 1/4 cup softened butter
  • 12 italian bread (slices)
  • 1 bunch fresh basil
  • 6 ozs pecorino cheese (italian, preferably cacio de roma shredded)
