  • 1 purple onion (sliced)
  • 2 green papaya (seeded, peeled and shredded)
  • 2 carrots (peeled and shredded)
  • 2 tsps sauce (Vietnamese garlic-chile)
  • 3 cloves garlic (minced)
  • 3 tbsps sugar
  • 2 tbsps fish sauce
  • 2 tbsps rice vinegar
  • 2 tbsps lime juice (freshly squeezed)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup peanuts (chopped, for garnish)
  • 2 lbs rock shrimp (peeled)
  • 1 tbsp peanut oil (plus extra for brushing)
  • 21/2 tsps oil (Asian sesame)
  • 4 ozs noodles (Japanese rice)
  • 1/2 cup shredded carrots (peeled and)
  • 3/4 cup mayo (good-quality)
  • 1 tsp rice vinegar
  • 2 tbsps toasted sesame seeds
  • 2 tsps sauce (Vietnamese garlic-chile)
  • 2 tsps salt
  • 1/2 cup chopped fresh cilantro
  • 12 lumpia wrappers (7-inch-square)
  • 1 eggs (beaten with 1 tablespoon water, for egg wash)
