  • 4 tbsps red curry paste
  • 7 fresh lime leaves, washed
  • 3 cans coconut milk
  • 3 cups chicken broth
  • 2 chicken breasts (very thinly sliced)
  • 6 mushrooms (sliced)
  • 1 red pepper (sweet, thinly sliced)
  • 1 cup beansprouts
  • 1/2 cup carrots (thinly sliced)
  • 1/4 cup fresh cilantro (chopped)
  • 4 red chili peppers (small, dried or fresh)
  • 2 handfuls rice noodles (pad thai style)
  • juice (a lime)
  • 7 carrots (mini, thinly sliced, reserve a couple of pieces to garnish)
  • 1 green onions (scallions thinly sliced, to garnish)
