  • 2 tsps canola oil (any you may have on hand works fine too)
  • 8 ozs fresh mushrooms (sliced)
  • 4 tbsps green onions (thinly sliced, divided)
  • 2 tbsps gingerroot (minced fresh, dried works also)
  • 3 eggs
  • 6 egg whites
  • 1 tsp sesame oil
  • 12 tsp sugar
  • 12 tsp salt
  • 2 tbsps reduced sodium soy sauce (regular soy sauce can be used, 1 tablespoon soy sauce mixed with 1 tablespoon water will yield same)
