  • 3 cups cheddar cheese (grated, monterey jack, or a mix)
  • 1/2 red cabbage (thinly sliced and tossed with salt)
  • 2 avocado (ripe, cubed and tossed with salt and lime)
  • 3 cups pork (arizona pulled, recipe follows)
  • 3 tbsps brown sugar (packed)
  • 1/2 tsp coriander
  • 1 tsp paprika (smoked)
  • 1/2 tsp oregano
  • 1 tsp chili powder
  • 1/4 tsp onion powder (optional)
  • 1/4 tsp garlic powder (optional)
  • 2 tbsps balsamic vinegar
  • 2 tbsps lime juice
  • 2 tbsps orange juice (bottled is fine)

  • 1 lb pork butt (or shoulder, cut into 2 or 3 pieces)
  • 1/2 cup beer (stout preferred but any kind works)
