Ingredients

  • 11/2 lbs pork loin (or butt, removed from the bone and diced)
  • 1/2 lb pork fat
  • 1/4 lb veal
  • 1/2 cup dry red wine
  • 1 head garlic (peeled and minced)
  • 1/4 cup green onions (finely chopped)
  • 2 tbsps fresh parsley (minced)
  • 1 tsp mustard seeds
  • 11/2 tsps salt
  • 3/4 tsp essence (recipe follows)
  • 1/4 tsp ground black pepper
  • 2 ' hog casings (optional)
  • vegetable oil (for frying)
  • sauce (Polish Honey, recipe follows)
  • 21/2 tbsps paprika
  • 2 tbsps salt
  • 2 tbsps garlic powder
  • 1 tbsp black pepper
  • 1 tbsp onion powder
  • 1 tbsp cayenne pepper
  • 1 tbsp oregano (dried leaf)
  • 1 tbsp dried thyme
  • 1/4 cup vegetable oil
  • 4 cups yellow onion (thinly sliced)
  • 1 tbsp minced garlic
  • 1 cup beef stock
  • 6 tbsps honey
  • 2 tbsps creole mustard (or other spicy whole grain mustard)
  • 2 tbsps apple cider vinegar
