  • 1 beet (trimmed peeled and cut into 8 wedges)
  • 1 lb halibut (skinless boneless and cut into 14 inch dice or other firm white ocean fish)

  • 12 red onion (finely diced)
  • 1 chile (aji amarillo, seeds removed and minced)
  • 34 jalapeno pepper (seeds removed and finely diced)
  • 1 piece peeled fresh ginger (12 inch, grated)
