  • 3 onions (coarsely chopped but kept separate)
  • 1 rib (celery with leaves cut into 2 inch pieces)
  • 1 carrot (peeled and halved)
  • 2 bay leaves
  • 3 sprigs fresh thyme (plus1 tablespoon chopped)
  • 2 cups water
  • 12 cup clam juice
  • 12 lb bacon (slab, cut into 14 inch dice)
  • 2 tbsps unsalted butter
  • 8 new potatoes (white, cut into 14 inch dice)
  • 2 cups heavy cream
  • black pepper (freshly ground, taste)
  • 2 tbsps flat leaf parsley (chopped)
  • crackers (oyster, optional for serving)
