  • 3 cups basmati rice
  • 1/4 cup lentils (whole red masoor, or 1/4 cup puy lentils)
  • 150 ml vegetable oil
  • 4 onion (thinly sliced)
  • 4 whole cinnamon sticks
  • 8 whole cardamom pods
  • 2 tsps gingerroot (fresh, finely grated)
  • 1 tsp garlic (crushed)
  • 2 tomatoes (medium, chopped)
  • 2 green chilies (halved)
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1/4 tsp ground turmeric
  • 1 tsp red chili powder
  • 1 lb ground lamb
  • 1 tbsp plain yogurt
  • 4 tbsps coriander leaf (fresh, chopped)
  • 2 tbsps mint leaves (chopped)
  • 2 potatoes (medium, peeled and chopped into small pieces that are 1/4 cm thick)
