Ingredients

  • 1 tbsp canola (or any neutral oil)
  • 1 lb parsnips (peeled and cut into 1-inch lengths, halved or quartered if thick)
  • 1 lb turnips (peeled and cut into 1-inch wedges)
  • 2 carrots (large, peeled and cut into 1-inch lengths)
  • 1 cup low sodium chicken broth (homemade or purchased, or braising liquid from pot roast)
  • 1/2 cup maple syrup (Organic, or honey)
  • 2 tbsps red wine vinegar
  • coarse salt
  • ground pepper
  • 3 tbsps unsalted butter
  • 1/2 tsp rosemary
  • 4 orange peel (ribbons, white pit removed)
  • 2 tbsps orange liqueur (such as Grand Marnier)
  • 2 star anise
  • 1 cup grapes (seedless, optional)
  • 1/2 cup salted pistachios (roasted and slightly)
