  • 2 lbs mahi mahi fillets (skin and blood line removed)
  • 2 eggs
  • 11/2 cups cornstarch
  • 11/2 cups milk
  • 2 tsps kosher salt
  • canola oil (for frying)
  • 8 shells (hard corn taco, or small soft flour tortillas)
  • 2 egg yolks
  • 1 orange (zested and juiced)
  • 2 whole garlic cloves
  • 1 tsp kosher salt
  • 1 tbsp ground cinnamon
  • 11/2 cups canola oil
  • 1 green cabbage (small, finely shredded)
  • 1 red cabbage (small, finely shredded)
  • 2 jalapeno chilies (finely diced)
  • 2 lime (zested, 5 limes, juiced)
  • 1/4 cup honey
  • 3 tsps kosher salt
  • 1/4 cup cilantro leaves (chopped fresh)
  • 1 tbsp ground coriander
  • 2 tbsps ground cumin
  • 1/2 tbsp cracked black pepper (freshly)
  • 1/2 tbsp kosher salt
  • 1/2 tbsp ground cinnamon
  • 2 tsps anise seed (ground)
