  • 1 cup low-fat ricotta cheese
  • 1/3 cup non-fat sour cream (or 1/3 cup reduced-fat sour cream)
  • 1 tbsp margarine
  • 1 tbsp butter
  • 11/2 tsps vanilla extract
  • 3/4 cup low-fat buttermilk
  • 1 tbsp sugar
  • 1/8 tsp cinnamon
  • 1 pinch salt
  • 11/2 tsps lemon zest (from 2 small lemons, I use a microplaner)
  • 1 eggs
  • 4 egg whites
  • 3/4 cup cake flour
  • 11/2 tsps baking powder
  • lemon curd (or maple syrup, for serving)
