  • 1/2 meatloaf (basic, chopped, left over)
  • 26 ozs diced tomatoes
  • 2 qts beef broth
  • 1 onions (diced)
  • 2 garlic cloves (minced)
  • 1 carrots (large, diced)
  • 1 potatoes (diced)
  • 3 cups frozen vegetables (peas, corn and green beans)
  • 1/4 cup pearl barley (more if you like it thick)
  • 1/4 cup alphabet pasta (or any other small noodles)
  • 2 cups baby spinach leaves (optional)
  • 1 pinch salt (and pepper, to taste)

I just love this soup. It is easy and quick to make and it gives a whole new level to leftover meatloaf.

I did not use pasta, and I only used half of the recommended amount of beef broth (my pan wasn't big enough for any more!). My husband didn't really like the meatloaf that I made a couple of nights ago, but he loved this!!!! It was very good. The frozen veggies that I bought came with carrots, so I didn't need to cut up fresh carrots.
