  • 2 stalks celery (finely diced)
  • 2 onion (large, finely chopped)
  • 2 tbsps minced garlic (fresh)
  • 1/8 tsp cayenne pepper (optional or to taste)
  • 10 ozs sliced mushrooms (well drained and chopped)
  • 14 ozs cream style corn
  • 12 ozs corn niblets (drained)
  • 1/2 cup chicken broth (can use low sodium)
  • 4 tsps poultry seasoning (or to taste)
  • 1 tsp seasoning salt (or to taste or 1/2-1 teaspoon white salt, or to taste)
  • 1 tsp ground black pepper (fresh, or to taste)
  • 4 tsps dried parsley (or use chopped fresh)
  • 1/4 cup grated parmesan cheese (optional)
  • 3 large eggs (slightly beaten)
  • 7 cups bread crumb fresh (coarse, packed, or use 8 cups packed very small bread cubes)
  • 1/3 cup melted butter (no subs please!)
