Ingredients

  • 14 cup tamarind paste
  • 1 vanilla bean (split in half)
  • 2 tbsps rice wine vinegar
  • 2 tsps light brown sugar
  • 3 tbsps low sodium soy sauce
  • 14 tsp freshly ground pepper
  • 2 tsps canola oil
  • 1 whole chicken breast (skinless boneless, 12 ounces cut into 12 inch wide strips)
  • 1 onion (sliced)
  • 1 piece ginger (2 inch, 34 ounce cut into 18 inch thick matchsticks plus more finely chopped for garnish)
  • 12 green chile (finely chopped plus more thinly sliced for garnish)
  • 2 peaches (ripe but firm, peeled and cut into 12 inch thick slices)
  • 10 ozs bok choy (baby bok choy cleaned and stems trimmed)
  • 1 scallion (sliced 18 inch thick for garnish)
