  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsps canola oil
  • 3 cups all-purpose flour
  • 2 tsps baking soda
  • 1 tsp salt
  • 11/2 tsps ground cinnamon
  • 1/2 tsp ground allspice
  • 1 tsp ground cardamom
  • 1/2 tsp ground cloves
  • 2 cups stout (Guinness, for Vegans try this sight http, or or homepage.ntlworld.com or geraint.bevan or Vegetarian_beers.ht)
  • 2 cups walnuts (broken, toasted)
  • 1 cup raisins
  • 1 cup chocolate chips
  • 1 tbsp fresh ginger (finely grated, or 1 tablespoon candied ginger)
