Ingredients

  • 3 tbsps red wine vinegar
  • 1 tbsp dijon mustard
  • 11/2 tsps anchovy paste
  • 1/2 cup virgin olive oil
  • 1 summer squash (large, cut into 1/4 inch slices)
  • 1 lb tuna steaks (1 inch thick,cut into 4 pieces)
  • 8 jumbo shrimp (shelled,deviened and halved lengthwise)
  • 12 sea scallops (large)
  • 1/2 lb green beans (cut in half if large)
  • 1/2 lb wax beans (yellow, cut in half if large)
  • 1 orange bell pepper (or 1 red bell pepper, slivered)
  • 1 pt cherry tomatoes (halved)
  • 11/2 cups Niçoise olives (drained)
  • 1 head red leaf lettuce
