  • 1 onion (medium, cut in 8 wedges)
  • 1 green bell pepper (cut in 8 wedges)
  • 1 stalk lemongrass (white bulb only)
  • 1 tbsp fresh ginger (coarsely chopped)
  • 3 tbsps green curry paste (Thai, recipe follows)
  • 2 lime leaves (kaffir)
  • 3 cups unsweetened coconut milk (2, 13.5 ounce cans)
  • 34 cup chicken broth
  • 1 12 lbs skinless boneless chicken breasts (cut in 1-inch strips)

  • 1 lime (juiced)

  • cilantro leaves (Fresh)

  • 1 piece galangal (peeled and coarsely chopped)
  • 2 lemon grass
  • 1 stalk white
  • 2 lime leaves (kaffir, torn)
  • 2 tsps shrimp paste (dried)
  • 12 cup water
