  • 1/2 cup onion (sliced)
  • 1/4 tsp fennel seeds (lightly crushed)
  • 1/4 tsp crushed red pepper flakes
  • 1/2 cup dry white wine
  • 1 vanilla beans (split)

  • 11/2 cups chopped tomatoes (peeled and, with juices)
  • 1/4 tsp salt
  • 11/3 lbs fillets (white fish, cut into serving pieces, orange roughy, cod or halibut would be good choices)
  • 2 tsps lime juice (or 2 teaspoons lemon juice)
  • 1 tbsp fresh parsley (minced)
