I love this recipe as it is so easy and quick to make. I find the tofu is much tastier if I marinate it the night before in some soy sauce, Chinese five spice, sesame oil and black pepper, but I always let it drain for around half an hour before adding it to the pan to prevent it from being soggy. As I don't buy pre-prepared vegetables I added some chopped spring onions, garlic, red and green peppers, bamboo shoots, water chestnuts, bean sprouts, broccoli, mushrooms and carrots. I don't always use all of these vegetables as it makes a huge amount of food and normally use three or four types although I always add the onion or garlic to make sure there is plenty of flavor. I have also made this using chicken which was equally nice and just as quick. I find this is a filling meal when served on its own although I also like to have it with fried rice.
