  • 14 tsp ground allspice
  • 34 tsp cardamom seed
  • 12 tsp ground cloves
  • 1 tsp ground coriander (powder)
  • 12 tsp ground cinnamon
  • 1 12 lbs beef (cut into 1 inch cubes 750 g)
  • 3 tbsps oil
  • 2 tbsps butter (ghee, niter kibbeh which is the real thing)
  • 1 onion (small finely chopped)
  • 2 garlic cloves (chopped and crushed)
  • 2 tsps berbere (spice)
  • 2 tbsps tomato paste
  • 12 tsp sugar
  • 2 cups beef stock (500 ml can use water)
  • 2 tsps sea salt (taste)
