Ingredients

  • 1 tbsp bacon drippings (or 1 tablespoon olive oil)
  • 1 cup diced onion
  • 11/2 tsps chopped garlic
  • 1/4 tsp crushed red pepper flakes
  • 28 ozs crushed tomatoes
  • 30 ozs tomato sauce
  • 3 ozs tomato paste
  • 1/2 tsp dried basil leaves
  • 1/4 tsp dried oregano (leaves)
  • ground black pepper
  • salt
  • 12 ozs ground chuck
  • 8 ozs sausages (ground pork)
  • 2 tbsps red wine
  • 1 large eggs (lightly beaten)
  • 1/2 cup green onions (minced, white parts only)
  • 1 tsp minced garlic
  • 2 tbsps fresh parsley leaves (chopped)
  • 3 tbsps grated parmesan cheese
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper (fresh)
  • 1 teaspoon Emeril's Original Essence (recipe follows)
  • 1 lb spaghetti (cooked, drained and tossed with olive oil)
