Ingredients

  • 11/2 gallons water
  • 1/4 cup salt
  • 48 ozs beer (lager)
  • 1 cup crab boil (liquid)
  • 31/2 lbs seaweed (fresh, or rockweed, rinsed in water)
  • 3 lbs small new potato (scrubbed)
  • 2 lbs yellow onion (small, left whole and ends trimmed, outer papery skin discarded)
  • 2 white corn (cobs, shucked, silk removed, and cut in half crosswise)
  • 2 corn (cobs yellow, shucked, silk removed, and cut in half crosswise)
  • 4 heads garlic (cut in 1/2 crosswise)
  • 3 artichokes (medium)
  • 2 lbs sweet italian sausage (cut into 2 to 3-inch pieces)
  • 2 lbs portuguese chorizo
  • 71/2 lbs lobster (rinsed)
  • 3 tbsps essence (recipe follows)
  • 4 lbs clams (live, scrubbed, soaked and well rinsed in 2 to 3 changes of water to rid of sand)
  • 2 lbs mussels (live, scrubbed, soaked, rinsed and debearded)
  • 1 lb asparagus (large, thick, tough ends discarded, trimmed to the same length)
  • 1 cup melted butter
  • 2 tbsps fresh lemon juice
  • cayenne
  • french bread (Warm)
  • 21/2 tbsps paprika
  • 2 tbsps salt
  • 2 tbsps garlic powder
  • 1 tbsp black pepper
  • 1 tbsp onion powder
  • 1 tbsp cayenne pepper
  • 1 tbsp oregano (dried leaf)
  • 1 tbsp dried thyme
