  • 1/2 cup button mushrooms (chopped)

  • 1 qt chicken broth
  • 14 ozs artichoke hearts (drained)
  • 1 bay leaf
  • 3/4 tsp salt
  • 1/2 tsp cayenne pepper
  • 1/4 tsp dried thyme
  • 1/4 tsp dried oregano
  • 1/4 tsp dried sage
  • 1 cup heavy cream
  • 12 shucked oysters (and juice)

This soup was amazing served at a recent family dinner. Everyone enjoyed it and several asked for seconds. It takes a little time to chop up all the veggies, but your effort will be well rewarded with the flavor of this soup! I followed the recipe with a few omissions and an addition---I left out the sage and only used a dash of cayenne. I added about 2 cups of cubed potatoes to make the soup more hearty. I also used 18 oysters instead of 12. My family loves oysters! This soup is an easy recipe and is ready pretty quickly. If you or the people you are making it for are oyster fans then this recipe will be a huge hit. My family from the youngest member (age 3) to the oldest enjoyed this soup. I will definitely be making it again, next time as a main dish served alongside salad and bread.
