Ingredients

  • 2 ozs ancho chile pepper (4 large, stemmed and seeded)
  • 6 large garlic cloves (3 of them finely chopped)
  • 1 tbsp salt (or to taste)
  • 11/2 tbsps ground cumin
  • 11/2 tbsps chili powder (not pure chile)
  • 4 lbs beef brisket (well-marbled, or boneless chuck, trimmed and cut into 1 1/2- to 2-inch pieces)
  • 31/2 tbsps vegetable oil
  • 1 in juice
  • 32 ozs tomatoes
  • 1/4 cup chipotle chile (canned, in adobo)
  • 1/2 cup chopped fresh cilantro (coarsely)
  • 11/2 lbs white onion (chopped, 4 cups)
  • 1 tbsp dried oregano (preferably Mexican, crumbled)
  • 21/2 serrano (fresh, or other small green chiles, finely chopped, including seeds, 1 is fine for most tastes; 4 is the eight-alarm version)
  • 12 ozs beer (not dark)
  • 2 cups water
  • 21/2 cups pinto beans (cooked, optional; 30 oz, rinsed if canned)
