A fail-proof recipe for rich, delicious chocolate cakes with a chocolate lava at the centre. To help them separate easier from the souffle dishes I greased the dishes and dusted them with cocoa powder which, unlike flour, won’t leave white spots on the cakes. It is better to melt the chocolate and butter on the stove so that you can monitor them and prevent them from burning. Also, check after leaving just 10 minutes in the oven to see if they are ready, as cooking times vary and overcooking with will destroy the molten centre. I served this with vanilla ice-cream. The combination of hot runny chocolate and the cold ice-cream is exceptional!
