  • 3 tbsps ginger (minced)
  • 2 jalapeno peppers (one with seeds if you like the heat)
  • 1 red pepper (sweet, stem and core removed)
  • 6 roma tomatoes (ripe, core removed)
  • 2 tbsps vegetable oil
  • 1 onion (cooking, finely diced)
  • 10 garlic cloves (minced)
  • 3 bay leaves
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 tsp garam masala
  • 14 tsp black pepper (cracked)
  • 18 tsp turmeric
  • 6 cups vegetable stock
  • 3 cups chick-pea (canned chick peas rinsed and drained)
  • 14 cup mango chutney (mild)
  • 14 ozs unsweetened coconut milk (stirred to mix pulp evenly)
