  • 1 bosc pears (firm-ripe)
  • 3/4 cup apple juice
  • 1/2 tsp corn starch
  • 2 tbsps calvados (or Armagnac)
  • 1 tbsp green peppercorns (packed in brine, drained and crushed lightly)
  • 1/2 vegetable bouillon cube
  • 1 tbsp duck
  • 1 tsp fresh thyme leaves (or 1/4 teaspoon dried, crumbled)
