These potatoes are so good. I love the crunch. Just be careful not to mash them too much. Just gently flatten them. The first couple I did fell apart because I think I pushed to hard on the potato masher. I didn't have fresh rosemary, so I just used salt & pepper. I also topped each with a little dollop of plain Greek yogurt for serving. Melting some cheese on top would also be good. I will be making these again.
