Ingredients

  • 3 tbsps olive oil
  • 1 cup white onion (minced, about 1 small onion)
  • 1/2 cup zucchini (chopped)
  • 1/2 cup green beans (frozen cut Italian cut)
  • 1/4 cup celery (minced, about 1/2 stalk)
  • 4 tsps minced garlic (about 4 cloves)
  • 4 cups vegetable broth (Swanson is good *note, Do not use chicken broth!*)
  • 30 ozs red kidney beans (drained)
  • 30 ozs small white beans (or 2, 15 ounce cans great northern beans, drained)
  • 14 ozs diced tomatoes
  • 1/2 cup carrots (julienned or shredded)
  • 2 tbsps fresh parsley (minced)
  • 11/2 tsps dried oregano
  • 11/2 tsps salt
  • 1/2 tsp black ground pepper
  • 1/2 tsp dried basil
  • 1/4 tsp dried thyme
  • 3 cups hot water
  • 4 cups baby spinach (fresh)
  • 1/2 cup pasta shell small
