  • 2 cups finely chopped onion
  • 12 cup carrots (finely chopped)
  • 12 cup chopped celery (finely)

  • 2 cups water
  • 12 tsp dried thyme
  • 12 tsp dried oregano
  • 2 tbsps fresh basil (chiffonade)
  • 4 veal chops (loin, butterflied and pound out 14 inch thick)
