  • 2 cups finely chopped onion
  • 1/2 cup carrots (finely chopped)
  • 1/2 cup chopped celery (finely)

  • 1 cup white wine (or dry red)
  • 56 ozs chopped tomatoes (peeled, seeded and)
  • 1 can tomato paste
  • 2 cups water
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 2 tbsps chiffonade (fresh basil)
  • 4 double-cut loin veal chops, bone-in, butterflied and pound out 1/4-inch thick
  • 1 cup flour
  • essence (recipe follows)
  • 2 eggs (beaten with 2 tablespoons milk)
  • 2 cups bread crumbs (fine dried)
  • 1 lb fettuccine (fresh)
  • sauce (Mornay, recipe follows)
  • 2 ozs parmigiano-reggiano (grated)
  • 21/2 tbsps paprika
  • 2 tbsps salt
  • 2 tbsps garlic powder
  • 1 tbsp black pepper
  • 1 tbsp onion powder
  • 1 tbsp cayenne pepper
  • 1 tbsp oregano (dried leaf)
  • 1 tbsp dried thyme
