Ingredients

  • 2 12 lbs tenderloin roast (center-cut beef, trimmed)

  • black pepper (freshly ground)
  • 3 tbsps unsalted butter
  • 2 shallots (medium, finely chopped)
  • 2 garlic cloves (medium, finely chopped)
  • 8 ozs cremini mushrooms (trimmed and finely chopped)
  • 2 tsps thyme leaves (finely chopped fresh)
  • 6 ozs chicken liver (pâté, such as our Chicken Liver–Port Pâté, at room temperature)
  • 6 ozs prosciutto (thinly sliced)
  • 15 ozs butter (package all-, puff pastry, thawed in the refrigerator if frozen)
