Ingredients

  • 1/2 cup boiling water
  • 1 tenderloin roast (2- to 3-pound center-cut beef, trimmed)
  • kosher salt
  • ground black pepper (Freshly)
  • 3 tbsps unsalted butter
  • 2 shallots (medium, finely chopped)
  • 2 garlic cloves (medium, finely chopped)
  • 8 ozs cremini mushrooms (trimmed and finely chopped)
  • 2 tsps fresh thyme leaves (finely chopped)
  • 6 ozs chicken livers (pâté, such as our Chicken Liver–Port Pâté, at room temperature)
  • 6 ozs prosciutto (thinly sliced)
  • 16 ozs puff pastry (package all-butter, thawed in the refrigerator if frozen)
  • flour for dusting (All-purpose)
