  • 4 qts apple cider (divided)
  • 11/2 cups kosher salt
  • 1/4 cup allspice (whole)
  • 8 bay leaves
  • 4 qts cold water
  • 20 lbs turkey (neck and gizzard reserved)
  • 2 cups low salt chicken broth
  • 1/2 onion (quartered)
  • 1 celery (stalk, cut into 4 pieces)
  • 8 sage leaves (fresh)
  • 2 cups apple cider
  • 1/2 cup unsalted butter
  • 8 cups apples (Sausage, and Parsnip Stuffing with Fresh Sage)
  • 3 tbsps all-purpose flour
  • 2 tbsps sage leaves (fresh)
  • 1/4 cup brandy (applejack, or Calvados)
  • 1/4 cup whipped cream
