Ingredients

  • 1 lb mexican chorizo (removed from casings and crumbled)
  • 1 tbsp chopped garlic
  • 1/4 tsp ground cumin
  • 2 cups pinto beans (cooked)
  • 1/2 tsp chili powder
  • 1/4 tsp salt

  • tortilla chips (Homemade, recipe below, or large, restaurant style corn tortilla chips)
  • 11/2 cups pepper jack (grated)
  • 11/2 cups cheddar (grated sharp)
  • 1 white onion (small, sliced into thin rings)
  • 5 jalapeno chilies (large, stemmed, seeded, and chopped, or to taste)
  • 1 cup sour cream
  • 1 tbsp fresh lime juice
  • cilantro leaves (Chopped fresh, for garnish)
  • 21/2 tbsps paprika
  • 2 tbsps salt
  • 2 tbsps garlic powder
  • 1 tbsp black pepper
  • 1 tbsp onion powder
  • 1 tbsp cayenne pepper
  • 1 tbsp oregano (dried leaf)
  • 1 tbsp dried thyme
