  • 15 ozs diced tomatoes (drained preferable)
  • 2 12 chipotle chile (canned, adobo)
  • 1 tbsp adobo sauce (canned chipotle chiles)
  • 2 tbsps olive oil (vegetable)
  • 3 garlic clove (cloves peeled and finely chopped i used an extra, i also used a garlic press)
  • 1 12 cups fish stock (i used chicken broth or 1 12 cups chicken broth i used chicken broth or 1 12 cups water i used chicken broth)
  • salt
  • 1 18 lbs shrimp (raw, peeled and deveined)
  • 14 cup fresh cilantro (loosely packed roughly chopped, garnish)
  • white rice (serving if desired i prefer medium or long grain, optional)
